Mr. Basketmaker’s Fresh Pepper Salsa

Most of you know that Eric does the cooking in this household. But don’t get the idea that I’m spoiled. I’m not. Okay, maybe I am a little spoiled. (But just a tad).

Last night, he made two jars of his homemade salsa and I got him to write out the recipe to share. He also wanted me to state that this is a “guestimate.” Your own trial and error with ingredients will produce the best salsa for you.

Mr. Basketmaker’s Fresh Pepper Salsa
-Dice 4 or 5 Tomatoes (It’s better if you use a few different varieties – plum, cherry, beefsteak, etc.)
-1 or 2 jalapenos to your taste, finely chopped
-Assorted small colorful peppers: 2 reds, 2 oranges, 2 yellows, finely chopped
-One finely cut medium onion
-2 cloves of finely diced garlic
-Add Fresh Chopped Cilantro
-Optional: Juice of one lime
Note: Add no salt. The chips already have enough!

Also use it between two tortillas loaded with cheese and grilled on the stove. Yum! Too bad it was Tuesday night and I have a lot of work to do today. Because Eric’s homemade margaritas go great with his salsa!
