It Was All About the Pickles.

I haven’t posted in quite a few days so I’ll do some catching up over the week. We had a little bit of a rough start for the Thanksgiving holiday. We planned on leaving last Tuesday but with the impending storm that seemed to be getting worse forced us to scramble on Monday morning. I finished laundry as fast as I could and then packed everything quickly and we hopped in the car to head north to New Hampshire. One hour into our trip, it began snowing, heavily. For the next two days of travel it either poured, snowed or sleeted. Definitely not my favorite conditions to travel in. And apparently not Chance’s either. Halfway into our journey, he threw up in the car, a few inches from my feet. But it was okay — after 10 minutes you got used to the stinky smell wafting throughout the vehicle.

No time to pull over. With 90% of people traveling by road for the holiday, traffic was crazy! And the driving skill level has apparently declined rapidly since last year. We passed so many accidents — nothing major. More like people not paying attention to the road! It added probably an extra 3 to 4 hours to our total travel time.

Nonetheless, it was nice to arrive at Eric’s parents’ home a day earlier. Why you ask? Because Eric got to help out his mom make her yummy pickles. Yes, pickles. They are served at just about all her get-togethers.

They sliced up summer squash, english cucumbers and onions. Eric mixed them all up in a bowl. While MomJo cooked up her secret liquid recipe, he put the veggies inside small mason jars.

Then the liquid is poured in, lids tightened and MomJo’s custom labels we had printed, applied. Next, the photoshoot! They didn’t take it very seriously though…

  2. Nice to see Eric with his mother. The pickles look great! Not sure what is in the secret recipe, but with Eric helping, I’m sure one of the ingredients must be beer! 🙂 Have a safe trip home.
